chore(deps): update s3s revision (#6795)

Update the s3s git dependency to 6e7b41252c7ba218a90886f58d297716ddf68acf.

This pulls the upstream SelectRequest XML alias compatibility fix while keeping the RustFS s3s compatibility boundary intact.
